The COVID-19 pandemic forcing many restaurants to operate most of the time with delivery and take-out only has driven the concept of “ghost kitchens,” that offer no seating. That has seen Urban Greek Street Food set one up in Fort Wayne, Indiana, trying to lure its customers with the slogan, ‘Let our Greekness be your Weakness,’ said the Greater Ft. Wayne Business Weekly.
Sotirios Bourounis, owner of Cosmos says about the business, “you can place a pickup/curbside order online or by phone … and delivery through Waiter on the Way and DoorDash,” the business said on Facebook.
Other Greek food eateries had already gone ghost, including Mezes & More in Dallas in August, 2020 when the pandemic was raging across the United States and the world.
Owner Anne Marie Cariotis told Dallas Culture Map then: “Everyone is stuck at home, and my friends and I have all been ordering charcuterie boxes. One day I threw it out there that maybe I’d put some Greek stuff together. They all ordered it, posted photos on Facebook, and suddenly I had a business.”
